Library has books to help those with celiac disease

For those who have celiac disease eating can be a torture.

According to the website “Celiac disease is an immune disease in which people can't eat gluten because it will damage their small intestine. If you have celiac disease and eat foods with gluten, your immune system responds by damaging the small intestine. Gluten is a protein found in wheat, rye, and barley. It is found mainly in foods but may also be in other products like medicines, vitamins and supplements, lip balm, and even the glue on stamps and envelopes.”

Others may not have the Celiac Disease but may suffer from gluten sensitivity or allergies. They can suffer from some of the same symptoms and problems as those with the Celiac Disease.

December 15 - 21 is Gluten-Free Baking Week. The Muskogee Public Library has books and online resources that can help you understand about the Celiac Disease and Wheat allergies.

What Nurses Know...Gluten-Free Lifestyle by Sylvia Llewelyn Bower, RN explains the difference between celiac disease, gluten intolerance, and gluten allergies.. She uses medical-based advise with a common-sense approach for those who have a problem with gluten She gives advice on setting up a gluten-free kitchen, what to check for in medication, and how to dine out and travel safely.

There are also several books at the Muskogee Public Library with many delicious gluten-free recipes. One such book is Gluten-Free Quick & Easy by Carol Fenster, PH.D.

This book shows you how to organize your approach to food and cooking and makes your time in the kitchen more productive. In includes recipes for hearty breads, pizzas, and pastas that are gluten-free. Carol teaches shortcuts, tips, and time-saving techniques that will make it easier for those on a gluten-free diet.

Susan Bell, in her book Gluten-Free Cooking Made Easy , has made many of the best comfort foods gluten-free. She also provides tips and advice on cooking and eating gluten-free. Susan covers shopping lessons, tips for eating out, gluten-free kitchen basics and much more.

In the book More from the Gluten-Free Gourmet by Bette Hagman there are gluten-free recipes for pastries, cakes, pies, and cookies. Also there are recipes for meat, poultry, seafood, rice and more that are “safe” for a gluten-free diet. Bette shows how to use an automatic bread machine with gluten-free flours. She also Includes a list of foods allowed and not allowed on a gluten-free diet., time saving mixes, and a list of stores and mail-order houses with gluten free products

These are but a few of the books and other resources available at the Muskogee Public Library for those seeking information on Celiac Disease or a gluten-free diet.
