BAKED APPLE PUDDING

That proverbial apple helped Newton discover the principle of gravity. Here it makes a weighty pudding.

3 apples, peeled, cored and halved
2 tablespoons sugar, plus more for sprinkling
1/2 teaspoon finely grated lemon peel
1/4 cup, plus 6 pats butter
1 cup flour
1 cup sugar
1 cup milk
1 egg
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup chopped walnuts
1 teaspoon vanilla extract
Vanilla ice cream

Grease an 8 inch baking dish.
Preheat oven to 350°.

Place apples in the prepared dish.
In the middle of each apple, put a teaspoon of sugar, a little grated lemon peel, and top with a small piece of butter.
Bake for 20 minutes.

Remove the apples from the oven and raise the temperature to 400°.
While the apples are baking, in a mixing bowl, beat together the butter, sugar and egg until blended.
In a bowl, combine the flour, baking soda, salt, nutmeg and cinnamon; gradually add to the sugar mixture and mix well.
Stir in the apples, walnuts and vanilla until well combined.

Pour the batter over the apples and bake for about 35 minutes, or until well risen and brown.
Sprinkle with sugar and serve with vanilla ice cream.
