STRAWBERRY MOZZARELLA SALAD
1/2 cup sliced strawberries
2 tablespoons olive oil
1 tablespoon balsamic vinegar
Salt and pepper
1 bag romaine lettuce
1 cup chopped mozzarella
Fresh basil leaves
Make vinaigrette by whisking 2 tablespoons olive oil and 1 tablespoon balsamic vinegar and seasoning with salt and pepper.
Place half dressing on berries and toss.
Place romaine on serving platter and toss with remaining dressing.
Top with strawberries, sprinkle with mozzarella cubes and some torn fresh basil leaves.
