CROCK POT CAJUN BEAN SOUP

Friday will be busy with Halloween church activities, parties and trick-or-treating. Make it easy for yourself by using your crock pot and jazzing up a store-bought bean mix.

1 package Cajun 15 bean soup mix with spice packet
1 small red onion, peeled and chopped
1 clove garlic, minced
1 15-ounce can petite diced tomatoes
2 cups diced Hormel Cure 81® ham
Olive oil for sautéing

Rinse beans and place in pot.
Cover with water 2 inches above beans.
Bring to a boil; cover pot and continue boiling for one minute.
Let beans sit, covered, while you sauté onion and garlic in olive oil 1 to 2 tablespoons olive oil.
Drain half the water off beans, then transfer to crock pot.

Add onion and garlic, canned tomatoes, spice packet from beans, and ham.
Add more water, if necessary, so that beans are covered and water level is about 1 to 2 inches above beans.
Set crock pot to appropriate cooking time, suggested 8 hours on low.

Serve with French bread.
