Ensalada Rus
This is a popular and common salad in Argentina, perhaps brought over by Russian immigrants.

4 Yukon Gold potatoes, cubed
2 carrots, chopped
1 cup cooked peas
3 tablespoons olive oil
1 tablespoon white vinegar
Mayonnaise
Salt and pepper to taste

Cook potatoes and carrots in boiling water until just tender; combine with cooked peas.
Mix olive oil and vinegar; pour over vegetables while still warm to soak in flavorings.
Cool vegetables to room temperature.
Mix in enough mayonnaise to bind potato salad; adjust seasonings.
