Serve this salad, courtesy of Jackie Scott, in a clear glass bowl for a beautiful presentation. Good any time of the year.

2 avocados, sliced

1 red onion, sliced thinly into rings

2 cucumbers, peeled and sliced thin

Zesty Italian dressing to taste

Peel, core and slice avocados; place in mixing bowl.

Add onion rings and cucumbers.

Toss with zesty Italian dressing of your choice.

Can add seasonings, if desired, and toss again.

Transfer to serving dish.

Refrigerate if not serving immediately, but only for a short duration, as avocados might discolor.
